December 30, 2014: Getting ready for New Year’s Eve! Bought a 16lb brisket for the smoker. Spent several hours today reading various styles and methods of cooking it. Wish me luck! There is no Plan B for dinner :) It goes on at 3am tonight for a 13-15 hour smoke!
